It's mid July and the fresh basil is taking over the garden, which can only mean one thing - PESTO.
There are many great options with pesto but this one has got to be one of my favourites. It's quick, easy, delicious, and ready to eat in under 30 minutes, making it the perfect week-night meal for you and your family!
Whitefish or other mild tasting fresh fish
1/2 C - 1 C Fresh Basil
1/8 C Pine nuts (or walnuts, cashews, or almonds)
1 clove Garlic
1/4 C Olive Oil
Salt and Pepper to taste
Parmesan cheese, grated (optional)
Preheat oven to 375F. Put all your pesto ingredients in a food processor or use a stick blender. If you want to get fancy you can toast your pine nuts, but I think it tastes just fine without the extra step. Process until you have a relatively smooth pesto, and spread on top of the fish. Bake for approximately 10 minutes until the fish is cooked through and firm to touch.
Serve with your favourites sides. Quinoa is a nice quick grain that I often serve with this dish, along side some roasted vegetables or sautéed greens.
This recipe will only make a small amount of pesto. A great way to speed up your meal prep even more is to make a big batch (double or triple the recipe) and freeze in jars or ice cube trays for even faster meal times!
